Abstract
Piedmontese capunets, cabbage rolls stuffed with meat, are also called "pèss-còj", or cabbage-fish. In Sicily, the very poor "pasta con le sarde a mare" lacks sardines at all, replaced by anchovies or, often, by nothing, that is, as in the marked/unmarked linguistic opposition, the significant absence of sardines. The game of forms and substances, in cooking, is often intertwined with that of appearances and similarities, of visual masquerades before even gustatory ones, as well as of related, often intentionally misleading names.
