Abstract

The article investigates the gastronomic universe of street food through two steps. The first is theoretical and highlights what are the founding semantic categories of street food with respect to other culinary worlds (home cooking, fast food, etc.) and, through this specifically relational point of view, also explains the transformations and inversions between systems of values that are in principle opposite. The idea is to conceive of street food not as some entity given from the outset but, on the contrary, as an effect od meaning of the social, media, gastronomic discourses that are made of it. The second passage is more empirical and is dedicated to Palermo's street food: chosen as a field of analysis to show the possible articulations and internal differences of a specific type of street food.
