Abstract
Naples was the capital of the Kingdom since 1266 to the unification of Italy; the city has always been one of the most populous cities of the West. These aspects have influenced the Neapolitan cuisine that has evolved along two lines, the royal cuisine and the popular one, which over time have become intertwined and fused together.
